Curdlan is an extracellular polysaccharide produced by Alcaligenes faecalis through a fermentation process, utilizing carbon sources, nitrogen sources, trace elements, and other nutrients. Its molecular structure consists of a linear glucan formed by D-glucose molecules linked via β-1,3 glycosidic bonds. Under heating conditions, curdlan exhibits the unique property of forming a thermally irreversible gel; hence, it is also referred to as a thermogel or gelling polysaccharide.
